Grass Fed & Finished Beef Info

Animals are meant to graze on grass, in nature, where they are allowed to roam in open spaces. Our cattle graze approximately 2,000 acres of pasture each year. They are rotated and moved every week to create and maintain a regenerative process. We build our soil by quickly impacting it with the animals. Our grazing methods can be simplified and understood through our management practices by grazing, pooping, trampling, and always moving. By doing this, we allow for energy, carbon, mineral, microbe, and the water cycle to naturally feed our livestock and to regenerate and fertilize the soil. Land and livestock management affects not only food production, but also soil health, human well-being, wildlife, watersheds, and the stability of our climate. Building a healthy environment for life to thrive in leads to healthy animals & happy customers.

Hanging Weight vs. Packaged Weight

Hanging Weight: This is the weight of the butchered animal as it hangs in the locker to dry age. This weight does not include the head, hide, hooves, blood and innards, which have been removed. Boxed Weight: This is the net weight of the meat you will receive that is packaged and ready for your freezer. You will be charged based on the hanging weight. The boxed weight is 60% of the hanging weight. As a general rule on a well finished 100% grass-fed steer, the hanging weight is 60% of the live weight and the cut and packaged meat is on average about 60% of the hanging weight. This percentage changes depending on bone in and boneless cuts.

Example on a 1/4 Beef: Hanging weight is 150 lbs. The packaged meat will be approximately 60% of the 150 lbs., which would give you 90 lbs. of packaged meat/boxed beef.

Example on a 1/2 Beef: Hanging weight is 300 lbs. The packaged meat will be approximately 60% of the 300 lbs., which would give you 180 lbs. of packaged/boxed beef.

Example of a Whole Beef: Hanging weight is 600 lbs. The packaged meat will be approximately 60% of the 600 lbs., which would give you 360 lbs. of packaged/boxed beef.

Carcass Yields depend heavily on the cuts you choose, for example, you can get up to 70% yield when obtaining mostly bone-in cuts and 50% yield with all boneless cuts.
